A shallot is just a small type of onion that isn't sharp. If you used a red onion or an ordinary onion and fried them until golden brown and added a sprinkling of sugar you would have the same taste.

Onions. White one, not red. Or the white part of a green onion. Sometimes you can get dried shallots (not as good) or fresh ones in the grocery store. Since they are much more expensive than regular onions, not too many people buy them here, but they are a staple back home in Europe. Buy 'em when you see 'em, and use in salads and such instead of your regular old onions.

Many recipes suggest that when shallots can't be found, you can substitute scallions. You can also try substituting 2 tablespoons chopped mild yellow onion (per shallot), or better still, white onion, which has a milder flavor.

Any of the following, preferably the last one, cause it is also mild like the shallot.
Pearl Onions
The most delicate and smallest onion
Boiler Onions
A larger onion perfect for any occasion
Cipolline
An Italian pearl onion that, when cooked, is mild and sweet
