Pasta. And in some sort of creamy sauce. They do have a thing called "pasta roni" which is like rice a roni, but with pasta, and better (or at least i think so)

I'd do a pasta salad with some fresh veggies and a light vinaigrette dressing, myself. You could mix spiral pasta with small slivers of red onion, tiny broccoli florets, some roasted red or green pepper, cherry tomatoes, and some cubed feta or mozzarella cheese. (Or whatever combination of fresh veggies that you have and like.)
I think it'd be a nice, light, refreshing contrast to the richness of the chicken and stuffing.

relies upon what the toppings are. only common white rice via itself isn't too interesting to me. Pasta with a great sauce is. Potatoes with butter and garlic salt works to. i think of i will elect pasta,
