Hawaiian Pork Chops
Ingredients:
4 (6 ounce) lean center-cut loin pork chops
1 egg white, lightly beaten
1/4 cup unsweetned pineapple juice
1 tablespoon low-sodium soy sauce
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
1 cup dry breadcrumbs
1 teaspoon dried Italian seasoning
1/4 teaspoon paprika
Trim excess fat from pork chops. Combine egg white and next 4 ingredients in a shallow container and stir well. In another shallow container, combine the breadcrumbs, Italian seasoning and paprika and set aside.
Spray a roasting pan and rack with nonstick cooking spray. Dip each pork chop in the liquid mixture and then lightly coat in the breadcrumb mixture. Place pork chops on the rack in the roasting pan.
Bake for 15-20 minutes (depending on thickness) at 350 degrees, turn and then continue to bake another 15-20 minutes or until no longer pink in the center.

Meal in Foil
For each serving, place a boneless chicken breast or boneless pork chop in the center of a heavy-duty square of aluminim foil. Season with whatever you're hungry for: barbecue sauce, teryiaki sauce, lemon pepper, Montreal steak seasoning, etc.
Place any or all of the following around the meat:
a medium potato, pared and cut into quarters; a peeled and thin-sliced carrot; a few broccoli spears; a few fresh mushrooms; red onion chunks. Dot the veggies with butter, and salt and pepper lightly.
Fold the edges of the foil up to form a tight packet, and bake at 350 degrees until the meat is done and the veggies are tender -- approximately 25 to 35 minutes, depending on the thickness of the meat.
Serve with a deli salad and bread sticks for an easy, delicious meal that has practically no clean up afterwards. Can't beat that combo! :-)

PASTA CACIO E PEPE
Pasta ,
2 1/2 Tbsp Pecorino Romano per person,
1/2 tsp black pepper per person, water.
Cook pasta "a dente". Grate Pecorino Romano and add black pepper. When pasta is cooked, drain it and save some of the water used to cook it. You can now sprinkle pasta with Pecorino and pepper, and at the same time you have to add some water (fro pasta) to make Pecorino melt and form a nice and creamy sauce.
Tomatoes filled with assorted vegetables - POMODORI RIPIENE DI VERDURE
4 ripe but firm tomatoes
300 g (10 1/2 oz) assorted, frozen
vegetables
4 tablespoons puréed tomatoes
2 tablespoons dried chives
2 teaspoons dried bay leaves
2 tablespoons dried parsley
3 tablespoons extra virgin olive oil
2 tablespoons apple vinegar, if you like
Dry breadcrumbs
Salt
Wash the tomatoes accurately, cut them crossways and scoop out their seeds and part of the flesh with a spoon(you can add this flesh to the vegetable mixture, if you want).
Salt them and turn out on a platter to drip them (at least 30 minutes).
Pour the frozen assorted vegetables into a pan with abundant, salted boiling water.
Bring to the boil again and cook for 10-15 minutes. Drain them very well and put in a little bowl; add the puréed tomatoes, aromatic herbs, vinegar and 2 tablespoons olive oil.
Stir and taste; add salt only if necessary. Put the mixture apart.
Preheat oven to 180°C (350°F) and oil a baking pan with the remaining olive oil. Fill the tomatoes with the vegetable mixture, sprinkle with dry breadcrumbs and bake for about 30 minutes. Serve them lukewarm.

Simple Red Sauce with Pasta
INGREDIENTS
1 (16 ounce) package penne pasta
6 slices bacon
1/2 teaspoon chopped garlic
1 red onion, chopped
2 tablespoons olive oil
3 tomatoes, chopped
1 green chile peppers, diced
1/2 cup grated Parmesan cheese
4 leaves fresh basil
2 tablespoons grated Parmesan cheese
DIRECTIONS
In a large pot with boiling salted water cook penne pasta until al dente. Drain well.
Meanwhile, in a medium skillet cook the bacon strips until mostly cooked, but not crisp. Remove from pan, break into bite size pieces. Drain bacon grease from pan. Return cooked bacon to pan, add minced garlic, chopped red onion, olive oil and chili pepper. Saute until onion is soft, about 5 minutes. Add chopped tomatoes, 1/2 cup of grated Parmesan cheese and fresh basil. Simmer for 10 minutes.
Pour ingredients into a large bowl. Add additional grated Parmesan cheese to top and serve immediately over cooked and drained pasta.

Beef Taco Bake
Serves: 4
Ingredients:
1 lb. ground beef
1 can (10 3/4 oz.) Tomato Soup
1 cup (small jar) Chunky Salsa OR Picante Sauce
1/2 cup milk
6 (8") flour tortillas, cut into 1" pieces OR 8 (6") corn tortillas, cut into 1" pieces
1 cup shredded Cheddar cheese (4 oz.)
Directions:
COOK beef in medium skillet over medium-high heat until beef is browned, stirring to separate meat. Pour off fat.
ADD soup, salsa, milk, tortillas and half the cheese. Spoon into 2-qt. shallow baking dish. Cover.
BAKE at 400°F. for 30 min. or until hot. Sprinkle with remaining cheese.

Buy all chredded will make it easier
Directions .
cook pasta till almost tender
Preheat oven to 400 degrees
brown meat
get bakeing dish
pour pasta and meat in
add jar of speghetti sauce
and all the cheese ( leave some to bake on top and to garnish with)
mix togather .
put cheese on top bake for 30 minutes garnish with rest of the cheese
Enjoy .
