Angel Hair Pasta with Sesame Shrimp
Ingredients:
2 cups uncooked angel hair pasta
1 pound asparagus, trimmed and cut into 1 inch pieces
3-5 small cloves garlic
1 cup sliced mushrooms
1/4 cup reduced sodium soy sauce
2 teaspoons sesame oil
1 tablespoon brown sugar
3 tablespoon chutney
2 tablespoons toasted sesame seeds
1 bunch scallions
1/3 cup vinegar
1 pound fresh shrimp or frozen shrimp, thawed
Prepare pasta according to package directions. Add asparagus pieces during last 3 minutes of cooking. Drain pasta and asparagus. Place sesame oil in a large saucepan heat over medium heat. Add garlic and mushrooms and saute for 3-4 minutes. Add soy sauce, brown sugar, chutney, toasted sesame seeds, scallions and vinegar and simmer for 3-5 minutes. Add shrimp and cook another 8 minutes. Toss shrimp and sauce with pasta and asparagus and serve.

SPAGHETTI ALLA PINUCCIA
(Pinuccia Spaghetti)
Serves 4
Ingred
400g (14oz) uncooked prawns
6 tablespoons olive oil
1 garlic clove,chopped
1 medium-sized red chilli pepper,chopped
1 tablespoon fresh parsley,chopped
5 tablespoons white wine
400g (14oz) tomato pulp
500g (13lb) spaghetti or fresh egg taglioni
Method:
Peel the central part of the prawns,leaving the head and tail shell intact.
Heat the oil in a frying pan and add the garlic,chilli and parsley,taking care not to burn them.Then add the prawns and fry for a minute.Stir in the wine and the tomato pulp.Cook for a further 2-3 minutes.
Meanwhile,cook the pasta in slightly salted boiling water.If using fresh,cook for 2-3 minutes if using the dried variety,about 6-7 minutes.
Drain the pasta,add to the pan with the sauce,mix very well and serve immediately.

My kids are big shrimp and pasta eaters. When I am short on time, I'll buy the Lipton pasta side dishes, usually cooking 2 of them and buying frozen cooked shrimp with tails removed. Thaw shrimp and drain, add to the pasta when it is almost done to heat shrimp thru. They love it. The flavor of pasta side dish varies, from alfredo to the angel hair pasta and garlic.

SHRIMP ALFREDO
1 tsp. salt
2 tsp. corn oil
2 tsp. butter
1 clove garlic
Sm. chopped onion
1 lb. shelled deveined shrimp
1 tsp. dry parsley
2 sticks butter
1 pt. lite cream (or half & half)
1/4 c. dry white wine
1 lemon
12 oz. fresh pasta
1/2 lb. grated Parmesan cheese
Start boiling water for pasta. Use a large pot. Add salt and oil to water. While the water is heating, put butter in a large frying pan. Turn on low flame. Heat butter until it melts. Add the garlic and onion. When garlic and onion are tender, add the shrimp. Toss often.
Meanwhile, in a medium saucepan on a very low flame, add butter. After butter is melted, add cream or half and half and stir. Put on simmer. When the shrimp starts turning pink, add white wine and squeeze the lemon over shrimp. Toss and cook for 1 minute. Don't overcook. Turn off flame and cover. Add pasta to boiling water. Add Parmesan to melted butter and cream. Stir often while pasta is cooking. (Fresh pasta shouldn't take more than 3 minutes to cook. Follow directions on package.)
Add more Parmesan for a thicker sauce, less for thinner sauce. Drain pasta in colander. Put the pasta back in large pot, add shrimp and sauce. Toss thoroughly. Transfer to serving dish and sprinkle parsley over top. Serve with a tossed salad and Italian bread. Serves 2 to 4.

1/2 lb. medium fresh unpeeled shrimp
1/4 cup nonfat mayonnaise
1/4 cup canned low-sodium chicken broth
1 tsp. grated lemon rind
1 Tbsp. fresh lemon juice
vegetable cooking spray
2 tsp. vegetable oil
1 Tbsp. peeled grated gingerroot
1 clove garlic, minced
1 cup ( 1-inch) diagonally sliced fresh asparagus
(about 1/2 pound)
2 cups hot cooked penne (short tubular pasta), cooked
without salt or fat
1/4 tsp. lemon pepper
Peel and devein shrimp; set aside.
Combine mayonnaise and next 3 ingredients in a bowl; stir well with a wire whisk,
and set aside.
Coat a wok or large nonstick skillet with cooking spray; add oit, and place over
medium-high heat until hot. Add gingerroot and garlic; stir-fry 1 minute. Add shrimp
and asparagus; stir-fry 3 minutes or until shrimp is done. Add mayonnaise mixture and
pasta; cook until thoroughly heated. Sprinkle with lemon pepper. Yield: 2 servings
(serving size: 1 1/2 cups).

I love shrimp scampi and pasta! Take your shrimp and saute with 1Tablespoon minced garlic. Next add 1/4c white wine and then 1c. butter and 1 tbs. italian parsley. Cook about 6 minutes and serve over linguini! YUMMY

(Low fat, low cholesterol and low calorie). 6 jumbo pasta shells, cooked
2 tbsp. finely chopped celery
1 tbsp. lemon juice
7 oz. sm. cooked shrimp
2 green onions, sliced
2 tbsp. finely chopped parsley
1 tbsp. reduced calorie mayonnaise
Combine all ingredients and mix lightly with a fork. If shrimp are large cut in small pieces. Stuff in large pasta shells. Yield: 2 servings.
