Generally for cookies especially chocolate chip cookies I don't sift the flour at all.

I have never sifted the flour in all the years I have been making chocolate chip cookies. And I have not heard a complaint from anyone. I also use shortening and not butter. Butter makes them more crumbly. Yumm. Are you making some for us?
