Pan Seared Lamb Chops with Mustard and Chives
Ingredients:
1 tbsp. oil
4 loin or rib lamb chops, each 1 to 1 1/2 thick
1/2 cup beef or veal stock
1 tbsp. fresh chives, minced
1 tbsp. Dijon mustard or other hot homemade mustard
Sea salt and pepper, to taste
Get cookin'
Heat oil in a large, heavy skillet. Sear chops quickly on both sides to seal in juices.
Reduce heat to medium and allow to cook, turning several times, to desired doneness - 10 to 12 minutes.
To test, make a small cut next to the bone. If it's light pink, it's perfect. Pour off some of the fat from the pan.
Remove cooked chops to a heated platter and keep warm. To deglaze, add stock to skillet and stir, scraping up any meat bits from bottom of pan.
Reduce over high heat until slightly thickened.
Remove pan from heat (turn heat to low); stir in chives and mustard. Return pan to low heat to warm the mustard, but do not allow to boil.
Add any juices that may have accumulated around chops.
Season with salt and pepper. Serve sauce at once, poured over lamb chops.
This is 2 servings
NOTE: Serve this with buttered noodles, broiled tomato halves and steamed asparagus. Oh Boy

Omg I am an Aussie and I live in florida and I would kill for lamb chops...lol Just put them in a frying pan and fry them for 3 or 4 mins each side. Then make some chips (fries) and a couple of fried eggs and some fried onions and smother it all with brown gravy and you will be in heaven. Don't bother with the grilling thing...thats just for artsy fartsy people...make a real meal....yummmmmmm

you can marinate them with coarsely shopped garlic, Rosemary and olive oil pepper/salt in a zip lock and through them on the grill. Or fry them in a pan medium heat again with olive oil extra virgin and add two gloves of garlic slightly crashed with peel and a spring of Rosemary for flavor. don't overcook them ! when they are like 2/3rd done remove them from heat and let them sit and rest for a few minutes - do not cover- before serving, so that the meat fibers relax and it will nice and brown outside and warm, tender and juicy inside. Best with green beans and mashed potatoes. Enjoy.

Just fry them in a pan,you can eat them with mint sauce or just as they are.Australian lamb is the best!
