The crucifixion of Jesus was unknown among the early church as late as the end of the second century. The last time they (Mary Magdalene & the 2 from Emmaus) saw Jesus, they saw Him a beaten bloody mess hanging on a cross without any life left in Him. When they saw Him in His resurrected body, they didn't even imagine it could be Him because of what they had last seen. And they may have kinda seen something familiar but He looked like all the other people from that place so He didn't stand out. For Mary, all it took was Him saying her name, for the 2 on the road, they saw Him break bread a very familiar thing before they recognized Him.

Because Jesus was stripped of his outer garments when he was crucified, and laborers often would wear nothing more than the basics due to the climate. Do you recall the event involving Peter out fishing? It says he was "naked", but that's taken to mean he was stripped down to the loincloth arrangement of the day.
Also, after that brutal beating, he probably looked like he just got through pruning a bramble bush or an Acacia tree (thorn tree of the desert).

When Jesus rose from the dead he was in his glorified state. His body had been changed. When we rise from the dead we shall also be changed. We shall be given a glorified body like that of Christ. In a heavenly state or in a hellish state the risen shall be both physically and spiritually immortal. This is why hell will be a very painful place to be.

First of all, you expect him dead, then if he were alive maybe she expected see him naked or with shorts.
In the process of his crucifixion, Jesus would have lose almost 20 pounds. Believe me, he will be unrecognizable. And the least person you expect around after three day is Jesus, you expect the gardener.

Because it was naturally expected that Jesus must have died on the cross;as such she was expecting him least.The deliverance of the Christ was known to very few people at that point in time.However, when Jesus started his journey towards the lost tribes of Israel, she was one of the three ladies having the name Mary, who migrated with Jesus.There are three graves in the east-one in Kashgar(China), Murree(Pakistan) and in Afghanistan, where the three ladies were burried.

He looked like St. Francis of Assisi or he looked like Padre Pio or he looked like any number of other Saints that are members of the Body of Christ. Remember they only realized who he was "In the breaking of the Bread" (the disciples on the road to Emmaus)

I think that verse was to show the even the most elite of us in the knowledge of Christ are capable of a lack of faith. He says in Luke13;25 he calls them fools due to their unbelief on the Emmaus road experience. In Mark he speaks of ridding Mary of seven demons. Well should wouldn't have those demons had she held on to her FAITH. Mark 16;9-11.

I'm sure she was still in shock at seeing His empty tomb. You really don't expect someone who had died to show up and start talking to you, but she knew it was Him. Besides, Jesus had literally been through Hell.

Jesus appeared to many, and he spoke to many, but he could alter his appearance and speech at will. He often appeared as a child, or as a peasant, as a humble man, and as a king. but he always appeared with knowledge, wisdom and Power.
Jesus would hide from Satan, when it was dark.
