I don't know if this is easy enough for you, as there are several ingredients, but I have been making this recipe for about 20 years:
Mix together:
3/4 cup butter
1 cup brown sugar
1/2 cup sugar
1 egg
1 tsp real vanilla extract (not imitation vanilla)
1 tsp salt
1 tsp baking soda
1 cup flour
3 cups Quick oats (very important - "quick" oats are the ones with smaller flakes, not the big honkin flakes. This is probably not a make or break issue, but I much prefer the quick oats)
cook for about 8 min at 375 F. they should seem slightly undercooked when you pull them out of the oven.
Prep time is about 10 min, not including cook time.
