Corned Beef Cabbage Recipe
Famous Restaurant Recipe
Preparation time: 20 minutes. Cooking time 2 1/2 - 3 hours. Serves 8-10.

Ingredients:
5 pound corned beef brisket
1 1/2 tablespoons pickling spice
1-2 Bay leaves
4 - 6 peppercorns (optional since your brisket is already seasoned)
2 heads of green cabbage
5 pounds small, red-skinned potatoes (for broiled or mashed potatoes)
Horseradish Sauce or spicy mustard

Instructions:
Trim excess fat from corned beef if necessary
Place corned beef in a large soup pot with seasonings and cover with cold water
Bring pot to boil and reduce heat
Remove meat from pot (but save the liquid), and place meat in a roasting pan and pour some of the beef cooking liquid over the corned beef (enough to cover the meat half way)
Cover the roasting pan and roast meat in a preheated 325 degree F oven for about 1 1/2 - 2 hours or until fork tender in the center
Prepare the vegetables by washing and cutting each cabbage into 8 wedges and scrubing the potatoes
Place potatoes in a soup pot, pour beef cooking broth into the pot, cover and bring to boil
Reduce the heat to a simmer and cook until the potatoes are done (15-20 minutes)
Place cabbage wedges in a baking pan and pour a little corn beef broth over the cabbage, cover and bake in a 350 degree F oven until crisp tender (about 15 minutes)

To Serve:
Cut the corned beef brisket across the grain into slices, holding the knife at an angle to get broader slices
Place the sliced meat in the center of a platter and arrange cabbage around meat
Pour or ladle a little corned beef broth over all
Serve potatoes on another platter or in a large serving bowl
Serve with horseradish sauce or spicy mustard

Corned beef is "not" an native Irish dish, it started in the United States. i should know I have lived in Ireland for 30 years and you will never find "Corned Beef" on any menu anywhere here. In fact "corned beef" in Ireland comes in a can and is a mixture of beef, fat, spices etc used in cold meat salads.

The traditional irish meal is in fact Bacon and cabbage, Bacon being salted pork similar to bacon found in the states except cut into much bigger sections e.g. 5-6 slices of bacon would make one section of irish bacon. This is then boiled in a pot of water and cabbage, beautiful.

CORNED BEEF AND CABBAGE

5 pounds corned brisket of beef
6 peppercorns, or packaged pickling spices
3 carrots, peeled and quartered
3 onions, peeled and quartered
1 medium-sized green cabbage, quartered or cut in wedges
Melted butter (about 4 tablespoons)

Place the corned beef in water to cover with the peppercorns or mixed pickling spices (in supermarkets, these often come packaged with the corned beef). Cover the pot or kettle, bring to a boil, reduce heat and simmer 5 hours or until tender, skimming occasionally. During the last hour, add the carrots and onions and cover again. During the last 15 minutes, add the cabbage. Transfer meat and vegetables to a platter and brush the vegetables with the melted butter. Serve with boiled parsley potatoes, cooked separately. (The stock can be saved to add to a pot roast or stew instead of other liquid.)

4 slices bacon
4 tablespoons butter
1 head green cabbage, coarsely chopped
Salt and freshly ground pepper, to taste
1 can corned beef

Cook the bacon in large pot over medium heat until almost crisp. Remove the bacon from the pot and set aside. Melt the butter in the pot with the bacon grease. Add the cabbage, stirring well to coat the cabbage in fat. Add about 1/3 cup water, and salt and pepper, to taste. Cover pot with a lid, and cook over medium heat for about 10-15 minutes. Meanwhile, chop the bacon into small pieces.
Remove the lid from the pot, and scatter chunks of corned beef and chopped bacon over top of the cabbage. Cover and cook until desired doneness. I personally like a little bit of crunch left to the cabbage.

Tip: Cabbage is one of those vegetables that naturally contains water in its leaves. Begin by adding just a small amount of water. As cabbage cooks, if it needs more liquid, then add more water.

Let the crockpot do the work for you. This version of corned beef and cabbage uses apple juice, orange peel, mustard, and cloves.
INGREDIENTS:
2 medium onions, sliced
2-1/2 pounds corned beef brisket, trimmed of fat
1 cup apple juice
1/4 cup brown sugar, packed
2 tsp grated orange peel, no pith
2 tsp prepared yellow mustard
6 whole cloves
1 head of green cabbage, cut into 6 wedges
PREPARATION:
Arrange sliced onions evenly over the bottom of the crockpot. Place corned beef on top of the onions.
Mix apple juice, brown sugar, grated orange peel, mustard, and cloves. Pour evenly over corned beef brisket and onions. Pour liquid mixture over the cabbage and meat.

Cover crockpot and cook on low for 10 to 12 hours or high for 5 to 6 hours.

Yield: 6 servings

This is so easy! put your corn beef into the crock pot add 1 can of beer( it will not get you drunk when you are eating) then fill the rest up with water. cook on low all day long then a half hour before you are ready to eat add the shreaded cabbage into the crock pot and your good to go! trust me I'am Irish, good luck
