I love to treat myself to a REAL (not turkey or beef bacon) BLT once in a while, but need to watch the fat and calories. Is there a particular cooking method that works?

George Forman grills are good, but the oven works just as well.
Put it on a rack, then put the rack in a pan and put it in cold oven.Make sure there is space between the rack and the pan, so that the bacon does not touch the bottom of the pan.
Turn the temperature to 400 degrees, and cook until it reaches 400 (the cooking time might be shorter or lower, depending on how thick the bacon is and on your oven). All the fat will melt into the pan, and you'll have nice crispy bacon. Once it's done, put it on several layers of paper towels to soak up any remnants of the fat.
Microwaving makes bacon chewy and gooey, so if you like it crispier, the oven is the way to go.

Place a layer of the bacon strips onto a wire rack in a shallow baking pan or cookie sheet and bake it. It comes out just as crisp and yummy, but all the fat drips down into the pan, not all over the bacon!

Place the bacon on a drain pan in the oven...fat simply drips through the grates.

Remove most of the fat and rind, place on a rack and grill under the top element in oven until you get it the was you like, from soft to crispy.

Drain on a paper towel.

Microwave your bacon between sheets of paper towels on a plate. It works all the time! =]

I cook mine on a George foreman grill, comes out great easy to clean up and sucks the fat out.

Find a pastic rack you drape the bacon over and put it in the microwave.

I do mine in the oven. 400 degrees on a cookie sheet lined with tin foil. Works wonders and cooks it really evenly.

why don't you try Canadian back bacon, it has little to no fat
