If we go on trips where we observe how professionals work in real life, would it be appropriate to write a thank you card for the experience afterwards? If so, how should one go about writing it? Thanks.

Would a card or letter be more appropriate?

A short thank you note is always appropriate, in any circumstance.

Instead of saying dear sir/madam include the person's name if you remember it. That'll make it more personal.

Try and include one little bit that you appreciated learning about.

Those two things will personalize the note.

If it is a career you'd be interested in or someplace you'd like to volunteer you could include a line stating that you:
found this info. particular interesting considering you are interested in.. and that you will follow up with a phone call to get more information.

Applauds you for having such good manners.

In today's market where electronic messaging is so abundant, a hand written letter/note of thanks is greatly appreciated.
In fact, some employers are still from an older school of thought and this is the type of thing they are looking for.
I wrote a small thank you note to a firm and that is how I got my internship.
Simply thank the specific person you dealt with for their time. Be sure to mention something specific that you enjoyed or that you learned. If you are vie-ing for a job, end the note with a statement that encourages them to contact you, like: I look forward to talking to you at the end of this semester.
Good luck!

Speaking as an employer, a letter of thanks is always welcome.

Dear Sir/Madam/Mr Smith etc.

Thank you very much for inviting me/us to visit your ........................................Which we found most interesting/illuminating/boring etc

Doesn't have to be very long, you don't need to write down everything you learned, just what you found the most interesting or whatever.

A letter of thanks should always be sent after any sort of invitation whether it is a party or a more formal visit. I once got a letter of thanks from a job applicant for 'taking the trouble to interview her'

Actually she got the job!
