This is my mother's meatloaf which is pretty good.
1 lb hamburg
1 slice bread, soaked in milk
1 egg, beaten
1 pkg dry onion soup mix (like the Lipton's package mix)
Ketchup ( 1/4 cup or more depending on preference)
water to moisten, if necessary
Mash up the slice of bread until there is no clue that it was once a slice. Add the beaten egg. Add the ketchup and the dry onion soup mix. Add the hamburg and mix really well. Add a bit of water if it seems dry and not mushy. (This will depend on the fat content of the hamburg) Dump into a bread pan/baking dish and shape into a loaf. Bake for approx. 45 mins @350 until it is no longer pink inside. Drain off the fat. (Serve with mashed potatoes and corn if I am coming to dinner!) Serves maybe 3 -4people with average appetites.
Good luck!

1 envelope dry onion soup mix
1 cup sour cream
2 eggs, slightly beaten
1 1/2 lb. ground beef
1 cup soft bread crumbs
2-3 strips bacon
Combine onion soup mix with sour cream in a bowl. Add eggs then ground beef and bread crumbs, mix well. Place in loaf pan and lay bacon over top. Bake at 375 degrees for about an hour. Makes 6-8 servings.
You can top this with bar-b-que sauce, steak sauce or your own choice of topping. Makes a very moist meatloaf.

1 lb. ground beef, 1 cup dried bread crumbs, 1 egg, 1 small onion chopped fine or grated, 1/3 cup katsup, 1 tablespoon Italian seasoning blend, salt & pepper to taste, dash of worchestershire sauce (optional). mix well, shape into loaf in a baking dish, bake at 350 f for an hour or so.
you can substitute ground turkey or chicken for the beef, just add 1 cup finely chopped mushrooms (adds moisture) and a tablespoon or so of olive oil in addition to the rest of the ingredients.
