It represents the shape of King David's Shield, however, there are many theories according the other sites and studies, this seems to be the most prominent finding
p.s. it also states to go along with this that it really shouldn't be looked at as the symbol of Judaism since there is no supporting evidence that there is anything connecting it to Judaism in that sense.

Because David was a King of Israel
He was the second King, the first from the tribe of Judah
The first was Saul from the tribe of Benjamin
He also in the line of forefather to Jesus
David had a heart for God as a young boy to stand up against the Gaint, He claim Saul down with his music
God honor David and said the Savior will come from his line

It would be in his official seal, and carved into the shields of his soldiers. The six-pointed star was David's. In the Hebrew, it's actually called "Magen David," which literally means "Shield Of David."
Also, contrary to popular belief, the Magen David is not a religious symbol and has nothing to do with Judaism. It is a national symbol representing the people of Israel.

The star of David is made up of two triangles, one is pointing up representing man reaching out to God. The other is pointing down representing God reaching out to man. They come together to make a star representing a harmonious life with God. I believe that this symbol came about around the time of King David.
