If a virus DOES mutate (spontaneously changing its gene sequence), that change is a result of its environment, which has damaged the normal gene sequence in some way. The virus is not performing a deliberate "flex" in response to its environment. That would require the ability to sense and respond to stimuli with thought and intent, something viruses are not capable of (thought and intent).
What you are really seeing is a virus with several types, all belonging to the same genus and species. Think of it as several different breeds of dogs, if that helps. Introduced to a specific poison, many different viruses will die, but one or two will not; they are already resistant to that specific poison. Without other "competition" for resources (the other, now-dead viruses), the resistant strain fills in the gap they vacated with progeny.
The same thing happens with bacteria, mold, and fungi. It has been observed in moths as well.
Ultimately, the answer to your question is "YES". While I highly doubt that a virus is actually mutating in response to its environment, the ability to flex and change, or fill in gaps left in an environment, is part of the Miracle of Creation.
