I have a book of Latin fairy tales and the author used olim to express once upon a time. Olim is also listed in my Latin dictionary as the correct term to express once upon a time.

olim [at that time]; of the past, [formerly, once]; of the future, [hereafter, one day]; with a present, [for a long time now; at times, often]

quondam - in the past, [formerly, once]; in the future, [sometime]; in gen., [at times, sometimes]

The word for once upon a time in latin would be "Quondam" and this word be the first word in the sentence as it is an adverb.

"Olim".

I love the word. Full of potential!

An alternative is "quondam". Ponderous -- and again full of potential!
