Meat Loaf
40 lbs. ground beef
16 eggs, lightly beaten
8 cups old fashioned oats
5 cups tomato juice
3 large onions, chopped
1/3 cup salt
2 tbsp. salt
SAUCE
3 cups water
1½ cups ketchup
6 tbsp. vinegar
2 tbsp. prepared mustard
2 tbsp. brown sugar
Combine beef, eggs, oats, tomato juice, onions, salt and pepper. Form into 16 loaves. Place in 9x5x3" loaf pans. Combine sauce ingredients; pour 3 tablespoons over each loaf. Bake at 350°F for 1½ to 2 hours or until no pink remains, basting once with remaining sauce.

I think you would need about 20 -25 lb. should do it. each loaf requires 1.5 lb Ground meat plus other ingredients. If you buy 25 lb.you would have 16 loaves.Eight slices per loaf will give you a total of 133 slices. About 2 per person. If that is too much and IT IS approximate go down to 20lb of ground meat.
You can make them over a few days and freeze them.
Take them out a day ahead. Slice them all and reheat them
I am guessing that you have other food to serve as well. Good Luck to you. I just love my meatloaf.

I would say about 20-25. Depends on what all you put in it but the meat will have shrinkage due to all the fat in ground beef! Here is an idea. Put your meat loaf mixture in a bell pepper and cook it. Very pretty presentation!

That seems like a really tough thing to make for 60. You figure one meatloaf feeds about 6 people so you'd have to make like 10 of them. So you'd need about 10 pounds. I would just make a baked ziti or lasagna. That can be made more easily for so many people.

I use one pound to feed my family of four with no leftovers. 60 divided by 4 equals 15 pounds of ground beef.

If you were just using the meat then I would say plan for a 1/4lb for each person but because meatloaf has so much filler in it you can cut that amount down considerbly.

You can bake the meatloaf ahead and re-heat. Unless you have acess to a commercial kitchen, you can cook the meatloaves over a couple of days and re-heat on day of service.

my recipe calls for 2 pounds and feeds 6-8, so about 20 pounds.
