2000 words is a good bit for this topic. Many believe that adding decoration to an area is a way to claim territory.
You may want to check out a few articles on Environmental Psychology which is the study of humans and their surroundings. Here is a wiki article to get you started.

I can't cover the 2000 words for you but I can try.

I think most people re-decorate to create it their "own". Deocrations left behind by previous owners, often don't reflect the new owners tastes and wishes. Ofcourse, the current trend from TV and decorating magazines to have people redecorate their homes, to match their "own" style. Which, in most cases, is just pulled from the media.

If you look back just 30 years or so, you'll find that the whole redecorating movement not as prominent as it is now. Back then, most people could live with the bathroom suite and kitchens a bit longer. Now, it seems people re-do them before they move in and throw out perfectly usable and (pretty) new cabinetry and suites. Today, the DIY movement is a billion dollar industry.

I, personally, think a lot of it is from society's need for everyone to be individual and put their stamp on something more permanent than clothing, makeup and such. And to some degree, people redecorate to fill an emotional void that in our fast paced society is lacking to many.

There is ofcourse the true want to add colour and warmth to your living space. And research does show that colours have different effects on peoples moods, and can help infuse energy or relaxation into the person. I think colour choices in the end, reflects the persons background and how they feel a room should be. Some people might like bright colours, like a vibrant red for a living room (lots of energy), whilst others are more into relaxation and therefore choose a pastel.

Just some thoughts. :)

It is an expression of self. Especially in a society of cookie cutter houses and mass produced furniture. These readily available items make it more of a challenge for a person to find there individuality and to express their uniqueness. That is why it is important to create a space that represents and nutures each persons individual spirit.

Well, my wife and I bought a plain jane house last fall. All white walls and beige carpet. BORING. So we are redoing each room as the budget allows to get some color and personality in the place.
