If you're planning on going out to get the vanilla extract anyway, I'd say go for it. However, you can always make one of these recipes now if you have all of the ingredients. Also, when I performed the search on All Recipes, I found a lot of other tasty looking cookies that required some ingredients that sounded delicious but you may not have them on hand. Find a recipe you like, and if it calls for ingredients you need to buy, pick some up while your out getting the vanilla extract.

You can leave out vanilla in any recipe...its not like the cookie will fall apart without it ..just adds that extra yummy flavor ..I have made chocolate chip cookies as well as muffins without it when I didn't have any in the house and they still turned out really good but I do have a recipe that doesn't call for it at all..
delicious recipe for shortbread cookies but its so simple as you can see, it only calls for 3 ingredients!
2 cups flour
1/2 cup powdered sugar
1/2 lb butter (DO NOT use margarine)
Cream butter and sugar.
Add flour, mix well.
Roll out and cut into desired shapes, place on parchment paper.
Bake at 350°F until pale golden.

Vanilla extract is very important to recipes, but you can substitute. It probably wouldn't taste the same. Some cookies do not require vanilla extract though. I would say buy some.

First of all you can add vanilla extract to any cookie you want if you want to give it a subtle vanilla taste......or..........you can avoid adding vanilla and add any other flavor......my family is partial to orange, chocolate, and mint. Go to cookies.com and get creative!!!

Shortbread, spritz, gingerbread... Go to allrecipes then click on ingredient search. In the ingredients you want put flour then in what you don't want put vanilla...additional keywords put cookies=)
