I am to tired to cook for longer than 30 min total. Can you hook a chick up with a good dinner suggestion. PLEASE

This is delicious - at least I think so - and quick. You need to do two things, thus:

1. Get an iceberg lettuce, cut it into bite-size pieces, put into the fridge (the colder it is the better). At the same time hunt for your best bottle of French dressing, the more mustardy the better.

2. Chop some steak into bite-size pieces and fry in a little oil with chili and cumin. Open a tin ot two of chick peas (garbanzo beans), drain them, and add to the meat mixture. Keep cooking and tasting until they feel Mexican. Keep that mixture as hot as you can.

Then for each person you need a bowl - a shallow soup plate is ideal. Pour the dressing over the lettuce and mix it well with your hands, then arrange in the bowls leaving a hollow in the centre. Tell everybody to sit down at the table. Then put a pile of the meat mixture into the centre of the salad and enjoy.

This dish is great because of the contrasts - cold lettuce, hot meat; crisp lettuce, soft chick peas, chewy meat; mustard in the dressing and the chili/cumin flavour. It's not elegant to eat but I've never seen any left-overs.

Pesto-Crusted Grilled Cheese
Serves 4


If you don’t own one please pop for a big electric gridlle – about 40 or 50 bucks – and you can easily make 4 of these at once.

Notice there is no butter in this one; you’ll get plenty of great flavor from the pesto sauce.


1/3 cup mayonnaise
2 Tbsp jarred pesto sauce
8 sourdough bread slices
4 (1-oz.) Provolone cheese slices
4 (1-oz.) Cheddar cheese slices

Stir together mayonnaise and pesto sauce and spread evenly on 1 side of each sourdough bread slice. Lay them, pesto sides down, on wax paper.

Place on them 1 Provolone slice and 1 Cheddar slice and top with remaining bread slices, pesto sides up.

Cook them on a medium-hot griddle or in a nonstick skillet over medium heat, gently pressing with a spatula, 2 or 3 minutes per side or until golden brown and cheese becomes nice and gooey – m-m-m-m-m--BOY!.

Salisbury Steak

Ingredients:
1 pound lean ground beef
1 envelope dry onion soup mix
1/4 cup diced carrots
1/4 cup diced celery
1 jar (12 ounce size) au jus gravy
1/2 teaspoon dried thyme

Directions:
Mix ground beef and onion soup mix in a medium bowl with your hands until blended. Shape into 1/2-inch thick oval patties.

Heat a large nonstick skillet over medium-high heat. Add the patties and cook 1 1/2 minutes until bottoms are browned. Turn over, scatter the diced carrots and celery around patties, and cook 1 1/2 minutes longer or until bottoms are browned.

Add gravy and thyme, bring to a simmer, cover and cook, turning patties and stirring vegetables once, 7 minutes or until patties are cooked through.
Serve over Noodles or Rice

PASTA SALAD
350 g (12 oz) short pasta (fusilli or penne)
7 ripe but firm tomatoes, peeled and cubed
85 g (3 oz) black olives, stoned
3 fillets of anchovies, chopped
4 tablespoons dried or fresh chives
2 mozzarella cheese, cubed or 20 cherry
mozzarella
12 leaves of fresh basil
12 tablespoons extra virgin olive oil


Bring to the boil abundant salted water and cook pasta according the instructions on the package.
Meanwhile prepare the dressing. Put all the ingredients in a large bowl and stir.
Cook pasta "al dente", drain it in the colander and run under cold water in order to stop its cooking. Add pasta to the mixture and stir well. Let chill at least 2 hours before serving but bring back to room temperature to serve.

STEAK DIANE
Ingredients
2 tbsp olive oil
½ onion, peeled and diced
splash of Worcestershire sauce
1 tsp wholegrain mustard
drizzle of olive oil
drizzle of balsamic vinegar
½ rump steak

Method
1. Heat the oil in a pan and sauté the onion for 5-6 minutes, until lightly browned.
2. Stir in the Worcestershire sauce, mustard, drizzle of oil and balsamic vinegar and simmer for a few minutes.
3. Bash out the steak using a meat mallet. Heat a little oil in a non-stick frying pan and pan-fry the steak for 2-3 minutes on each side, or according to personal taste. Pour the sauce into the pan with the steak and heat for another minute.
4. Transfer to a serving plate and serve.

Spaghetti or any type of pasta. You could also take some chicken cutlets and throw them in the oven to bake, put a couple of potatos in as well and heat up some veggies in the microwave. You can take chicken, veggies and stir fry sauce and put it all in a pot on the stove and cook it together. Spice it up with some garlic powder and red pepper flakes and serve over minute rice.

Tuna wiggle, the easy way:
1 can drained tuna
1 can mushroom soup
1/2 cup frozen peas

mix together, heat, and serve over toast or saltine crackers

Fresh chopped meat molded into balls with uncooked rice, browned in olive oil, then add beef boullion or just a little water. Make a nice salad or some veggies, and "poof"

I don't know Princess..I am making taco's tonite. Buy the shells and cook the hamburger..chop the tomato and onion and you can buy shredded lettuce and cheese. Hope this helps you :) I like fast myself too and maybe you should think about slow cookers that may help you too.
