Why don't stores carry other types of eggs to be eaten, like turkey eggs?

Chickens are already easily cultivated here in the US and their eggs are widely used in recipes because of their size. Small, yet easy to manage. Strong enough to hold their own in a carton(most of the time), but still weak enough so you can crack them open without any problems. Restaurants usually use "large" produce eggs because of the rich protein content in the yolk and has just the right amount of albumen(whites) for normal cooking.

Don't be surprised to see other type of eggs out there, quail eggs are used fairly often nowadays. Sure you can have an ostrich egg omelet, but you'll need a huge skillet and it can feed a family of four.

Because you need a lot of chickens for all those eggs. And that's not a problem since we eat the chicken too. It would be tough selling all those emu's.
