Check the eyes when buying fish..if they are black and clear it is fresh..if the eyes are cloudy or opaque it is not fresh.

With whole fish, it's easy. The eyes should be clear and the iris clearly defined within the eye. The gills should be bright red and lift apart easily when touched. The meat should be firm and not smell fishy.
If you are trying to determine if the fish was previously frozen, which can detract from the fishes' naturally occurring oils that are good for you, the only sure method is to ask your grocer. If he's honest, he'll tell you if its been frozen or if it is in fact 'fresh' fish.

The eyes should be clear not cloudy.
There should be no tainted smell.
The flesh should be firm and springy, not soft and mushy.
When you catch a fish it is best to kill them as quickly as possible, de-head them, remove the gills, guts and bloodline and get them on ice.
If you don't kill a fish cleanly or leave it flapping, it goes into shock and produces toxins that can have an effect on/spoil the taste. This is especially true with pelagic/oily fish like mackerel.

Fresh fish from the market will not have cloudy eyes. There's strict ruls and regualtions for markets that sale fish and here in Georgia, Rose Hill Seafood sales them so fast they don;t have a chance to go bad.

It should smell fresh...not Stinky!!!
And it's eyes should be Clear...not Cloudy.
And if you don't puke after eating him, he was probably ok!
Best bet, If in Doubt, don't buy it!!

It looks like the EYES have it. and I agree don't buy fish if the eyes are cloudy.If you're buying fillets smell is your best way if it smells like bad cat food don't buy it.
