Fettucini Carbonara Ala Fratelli

Ingredients

(2 servings)

3 sl Bacon, cut into 1" pieces
3 tb Onion, diced
4 Garlic cloves, crushed
3/4 c White wine
3/4 c Half-and-half
1/2 c Romano cheese, grated
1 Egg yolk
2 x Servings fettucini, cooked
Chopped parsley for garnish

Instructions

In an 10" pan, fry the bacon until the fatty portions are just beginning to turn clear. Add the onion, and saute over high heat until the onion is translucent. Drain off the fat, remove the bacon and onion, and set aside.
Add the garlic to the pan, and deglaze the pan with the wine, scraping up any bacon leavings. Simmer for about 1 minute. Add the half-and-half to the pan, and wait until the sauce come back up to the simmer (with practice, this can be done so that the half-and-half does not curdle in the wine. If it does curdle, that's okay - the taste will still be there, it just won't look as nice). Add the Romano cheese (parmesan is acceptable, but the taste will be a little more pungent), and stir until smooth, about 30 seconds. At this point, the sauce may be removed from the heat and held for about 15 minutes.
To serve, bring the sauce back up to temperature. Add the cooked fettucini to the pan and toss to coat the pasta. Add the bacon, onion and raw egg yolk, and toss to mix thoroughly. Dish onto two plates, garnish with a bit of chopped parsley, and serve immediately.

Make baccon is a skillet remove and save drippings (crumble baccon in to bits)

In same pan cook boneless skinless chicken breasts (chopped in to chunks) add all purpose seasonings before cooking when juices run clear and fully cooked set aside with bacon

Add bacon drippings back into the pan, add 1 cup of white wine, 5 cloves of garlic chopped, one can of artichoke hearts (I use the marinated ones) add 2tbsps of butter & one cup of chicken stock or broth. Sautee and then toss all ingredients in with a pound of cooked angel hair pasta.

Good Luck and Enjoy! ;-)

Two traditional Italian dishes for you

Bucatini all’Amatriciana
400 g (14 oz) bucatini or other pasta
100 g (3 1/2 oz) pork cheek or pancetta or bacon
6 fresh and ripe tomatoes, cubed
1 fresh young onion, finely chopped
2 tablespoons extra virgin olive oil
45 g (1 1/2 oz) grated sharp Roman Pecorino
cheese
Chilli, if you like
Salt
Cut pancetta or bacon into 1/2 by 1in strips. Cook it together with oil in a wide frying pan over medium heat; stir frequently. Keep on cooking until pancetta becomes crisp and lightly browned. Remove with a slotted spoon and set aside. Add onion and chilli to the pan and cook, stirring frequently, until onion is soft. Mix in tomatoes and their liquid. Season to taste with salt and cook over a gentle heat for 10-15 minutes or until sauce is slightly thickened. Some minutes before the end of cooking mix pancetta into the sauce.
Meanwhile, cook bucatini in a large kettle of boiling salted water according to the package directions. Drain well and dress with the sauce. Serve with grated sharp Roman Pecorino cheese.
Serve immediately

Spaghetti alla Carbonara
350 g (12 oz) Italian spaghetti or other pasta
100 g (3 1/2 oz) bacon, cubed
2 eggs
4 tablespoons extra virgin olive oil
Grated Pecorino cheese
Grated Parmesan cheese
4 tablespoons light cream (single cream)
Salt
Freshly ground pepper, if you like

Cook spaghetti in a large kettle of boiling salted water according to package directions, until al dente. Pasta must be al dente because you have to finish cooking it in the sauce.
In the meantime, simmer bacon in a wide frying pan with the olive oil, stirring, until it browns on all sides.
Beat the eggs with a pinch of salt, the grated cheeses and light cream. Season to taste with pepper, if you like.
Drain spaghetti very well, pour into the frying pan and stir in order to flavor pasta. Then add the beaten eggs. Stir accurately, keeping the pan lightly lifted over the flame to avoid eggs cook: they must warm up, not cook! The secret of this creamy first course lies in this step.
Serve immediately.
