Cube steak is a particular cut. Fry it up in a pan with onions. Serve it with the juices it makes or with a brown gravy. My mom used to make it. It's very simple.

If grandma's birthday was not immediately upon us, I would suggest you go shopping for a meat mallet. Mine has diamond points on both sides, one side bigger points than the other. You can use a nice half inch thick cut of round steak. Cut in serving size pieces and set aside. Make a flour coat of a cup of flour, half teaspoon of black pepper and teaspoon of salt, and quarter tsp of paprika. Now take a piece of the steak and pound the flour into each side. Fry up and with the crumbs left in the pan, add some water and a couple beef boullion cubes. The crumbs will make a loverly gravy.
Before I had a mallet to work with I used a big thick saucer and chopped at my steak pieces with that. It took much longer but it works if your pounding base is a nice piece of clean wood like a chopping block or slicing block.. Do not use a saucer OR the mallet, on a harder surface like tile or china.
Make sure you have enough time to cook until tender. You do need to practice this for yourself once before you give it to anybody as a birthday dish.
Yes you can find the cube steak at the grocerys allready cut with little cubie cuts but when you find that mallet and wooden board, you'll want to make this, because even the leftovers are good.
Want to make it really fancy? add some sippin wine instead of that water, mushrooms, and a few pearl onions, or a little chopped white onion, to the steaks gravy, cook til tender and let it sit overnight.. yes.. overnight.. with the steaks in the gravy, and reheat the next day for a wonderful uncopyable flavor.. (only sitting overnight makes this flavor develop).
I serve this on hot buttered noodles. With your choice of vegetable and salad, it makes one special meal.

You can buy cube steaks in the meat dept of your grocery store. Beat two eggs . In a shallow dish, season flour with pepper, salt and garlic powder.
Heat a thin layer of olive oil in a skillet. Dip each steak into the beaten egg, then into the seasoned flour, and into the hot oil and brown well on each side until cooked through.
Remove steak from pan. Leave browned bits in skillet and sprinkle lightly with more seasoned flour. ( about 1/4 cup) Brown this and stir slowly and slowly add milk in a steady stream while still stirring. That's the gravy. Add more milk to make it thinner if you wish. Adjust seasonings. Return steaks to the gravy mixture for about five minutes.

Is the steak already "cubed"?
1. Season raw meat with salt, black pepper, and garlic powder
2. Coat the meat with flour
3. Heat skillet with vegetable oil or butter, just enough to coat the bottom
4. Fry meat for at least 4 to 5 minutes on each side.
Gravy (taste great with it)
5. Use same skillet and add 2 tsp of flour or a brown gravy packet, stir the flour into the grease drippings of the meat
6. Pour in water to coat the meat, stir get any gravy lumps out
7. Add a medium onion, diced
8. Let simmer for 20 minutes
9. Pour over rice or potatoes.

You can purchase cube steak in your local store's butcher section. Cube steak is round steak that's been tenderized - you'll see the difference - the cube steak has little holes from the tenderizing machine.
The easiest, tastiest way to make it:
Crush about 15-20 Saltines in a Ziploc.
Add: 2 Tbsp. Flour
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. baking powder
Salt and pepper to taste. Shake ingredients then pour into a pie plate.
In another shallow dish, mix up two eggs.
Dip your cube steak in first the egg, then the dry ingredients, coating both sides. Pan fry in thin coating of hot oil, each side until crisp and brown.
Then place on a metal rack on a cookie sheet and bake in the oven at 375 for twenty minutes or until meat thermometer in center of meat registers 160 degrees F.
You can also use the drippings in the skillet to make a gravy - I usually buy a packet of dry country gravy mix and prepare it in the drippings in the skillet following the instructions on the gravy packet. Very tasty!

Cube steak is generally a tough cut of steak that the butcher runs through a "tenderizer" which are two rollers that have blades on them. The blades makes many little cuts in the steak breaking up the tough fibers. It looks like a steak that a car just ran over it.

INGREDIENTS
1/4 cup vegetable oil
4 (4 ounce) cube steaks
1/2 teaspoon salt, or to taste
1/4 teaspoon ground black pepper, or to taste
1/2 cup all-purpose flour
1 green bell pepper, seeded and chopped
1 medium onion, chopped
1 stalk celery, chopped
1 (6 ounce) can mushroom stems and pieces, undrained
1 (1 ounce) envelope dry onion soup mix
1/2 teaspoon dried oregano
salt and pepper to taste
1 1/2 cups tomato juice
1 cup ketchup
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Heat oil in a large skillet over medium-high heat. Dredge the cube steaks in a mixture of flour, salt and pepper, and brown them in the hot oil.
Arrange steaks in a 9x13 inch baking dish. Sprinkle the green pepper, onion, celery, mushrooms, oregano, and onion soup mix over the steaks. Stir together the tomato juice and ketchup; pour over everything in the dish.
Bake for about 1 hour in the preheated oven, or until the meat is cooked through, and the sauce is thickened.

I put flour, salt, pepper...any other seasoning like chili powder in a plastic bag place the meat in the bag and coat well.
While you do this have a small amount of cooking oil (I prefer olive oil) heating in a fry pan when the oil is hot place the steaks in the pan. Turn the heat down and watch it turn from red to brown. Flip.
You can also bake in the oven...

Take a nice cut of steak (you want it fairly thin) and slice it across and up and down, think cube. Don't slice it all the way through just enough to cube it and so the gravy will marinate it. Then cook it real slow in a nice brown gravy, or you can buy them cubed already. That is how mom always made them.
Anyway this dish goes great with mashed potatoes and garlic toast!

Heres a great recipe. Its really easy too!
* 4 (4 ounce) cube steaks
* 1/2 teaspoon Cajun seasoning, or to taste
* 1/4 teaspoon freshly ground black pepper
* 1 (12 fluid ounce) can or bottle lemon-lime flavored carbonated beverage
* 2 (10.75 ounce) cans condensed cream of mushroom soup
* 1 (1 ounce) envelope dry onion soup mix
DIRECTIONS
1. Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking dish.
2. Season the steaks on both sides with Cajun seasoning and black pepper. Place the steaks into the prepared baking dish. Pour the lemon-lime beverage over them. Combine the cream of mushroom soup and dry onion soup mix, and pour over the steaks.
3. Bake, uncovered, for about 1 hour, or until meat reaches desired doneness. Do not open the oven door during the first hour of cooking. Serve steaks with gravy spooned over.

I have always covered the meat in flour,salt, and pepper mixture and then fried it. Then when I eat it I may use steak sauce of your choice.
Now another way I will make it is cover it in cracker crumbs and then fry it.
