I'm having about 10 people over for Easter lunch. Most are meat eaters and we're having a baked ham. Some are vegetarians, though, and I want to make sure that I've taken their needs into consideration too. Your ideas and suggestions would be very helpful! My menu thus far is:

Baked ham
cheesy scalloped potatoes
corn spoonbread
spinach salad
deviled eggs
lemon meringue pie

I might include some kind of pasta salad or baked macaroni dish if they are not strict vegans.

Easy but yummy soup.
Serves four to six
250g (9oz) potatoes
2 medium leeks
25g (1oz) butter
1 tbsp oil
1 stock cube
dried mixed herbs
300ml (1/2 pint) milk
salt and ground black pepper.
Eat straight away.

Peel the potatoes and cut into small chunks. Put them in a large pan with the leeks, butter and oil and stir everything well.
Turn on the heat and slowly melt the Butter. When it starts to sizzle, put a lid on the pan and turn the heat down low
Let the vegetables cook gently for ten minutes. Shake the pan occasionally to stop it from sticking, but don't lift the lid
Meanwhile, boil some water. Put the stock cube into a measuring jug. Pour in 900ml m(1/2 pints) of boiling water and stir it
When the vegetables are cooked, carefully pour in the stock. Add a pinch of mixed herbs, the milk and a little salt and pepper
Turn up the heat and bring the soup to the boil. Then, turn the heat down so that the soup is bubbling gently.
Let the soup cook for about 15 minutes more, then, use a ladle to serve the soup straight Away into Bowls.

Pineapple Bread Pudding

Ingredients:
3 eggs, beaten
1/2 cup butter
1 cup white sugar
1 (20oz) can crushed pineapple with juice
1/2 cup milk
11 to 12 slices of sandwich bread
1/4 teaspoon vanilla extract

Directions:
Preheat oven to 375 degrees F (190 degrees C). In a mixing bowl, cream together butter and sugar. Add eggs, milk, pineapple and juice, bread cubes, and vanilla. Mix together and bake in a 2 quart casserole dish or oblong glass baking dish for 40 to 45 minutes.

Sounds yummy to me...I might add another green vegetable like steamed asparagus...
