Because we owe our existence to God.
By professing that they are non believers, they actually are trying to speak out on a subject, on which even believers are dumbfounded.
No matter howsoever we try, it is not possible to forget God!
That proves the point that all are only believers.

It's an important question and there are a lot of very loony ideas about it.
I rarely think about god except when I'm debating.

That's a way in which God shows up in their thoughts, pro or anti, thoughts have god in them! Remembering God in any way (pro or anti) will make God come to you, like He came to both Hrinayakashipu and Prahalad, one was anti-God and other a devotee, but both were constantly thinking of God.

Most of them used to be believers.
Also, they are surrounded by believers. I'll bet if you were surrounded by chicken worshippers, had chicken lover stores at your mall, chicken universities and chicken channels on the tv, chicken stamped on your money and the leader of your country was a chicken worshipper, you'd take a pretty healthy interest in chickens!!
Assuming you don't already love the little feathered darlings.
