My friend has given me a load of wild boar which was shot yesterday. Can I freeze it straight away or should I let it rest for a few days first?

Yep, you sure can! Try and cook it all within 6 months, so it won't lose the wonderful flavor.

It needs to 'cool' and rest first, for about 24 hours in a cool, dark place. DO NOT freeze if it still feels warm to the touch! But before that, any recently slaughtered/shot pig or boar firsts needs to be cleaned (remove all entrails, allow to cool thoroughly and freeze seperately) but the head can be left on. Remove all hair or stubble, singeing skin with a blow torch if necessary. If you quater it, it'll cool quicker and be easier to freeze and defrost in manageable pieces.
NB: wherever you lay the meat to rest for 24 hours, make sure it is absolutely free from flies as they love pork meat and will lay their eggs inside the cavity if given the chance.

I had a fresh killed pig not long ago also. If you have to, you can leave it for about 3 days at the most. I left mine for 2 because I had to work and couldnt get it cut to put it away. Just make sure you keep it cold.

I'd freeze it right away, unless you are going to have it smoked or treated with preservatives. The meat may go bad if you leave it untended for even a few days.

off cause you can freeze it straight away or if need be seperate it all in bags ..... s o you can get to it more easily .....anyway hope you enjoy iy never add wild boar myself

Yup...cut into usable sized pieces and freeze it. If you have a vacuum sealer all the better.
