Sauteed:

3/4 lb Lamb steak, cut from leg

1/4 c Red wine

3 tb Red-wine vinegar

1 ts Rosemary, dried

1 md Garlic clove, crushed

1 tb Mint jelly


Remove fat from lamb. If the piece is thick, cut it in half lengthwise so that each piece is about 3/4 inch thick. Mix red wine, vinegar, rosemary and garlic together in a small bowl. Poke several holes at varying intervals in the lamb. Place it and the sauce in a zipper-lock bag to marinate for 20 minutes. Turn after 10 minutes. Heat a medium-size non-stick pan. Remove lamb from marinade and pat dry with a paper towel. Reserve marinade. Brown the meat in the hot pan, and saute 3 minutes per side. Remove to a plate and cover with foil to deep warm. Add reserve marinade to pan, making sure it comes to a boil. Scrape up brown bits in bottom of pan and add mint jelly. Heat to serve with sauce spooned over top.

Or minted kebabs:

MARINADE
1/2 cup thick mint sauce
2 tablespoons tomato paste
1 teaspoon gingerroot, grated
1 teaspoon garlic, crushed
1/4 cup honey
1 teaspoon cumin
1 teaspoon dried rosemary, crushed
KEBABS
750 g lamb steaks, diced
12 bamboo skewers

To make marinade, in a small bowl whisk all ingredients together.
Thread lamb onto bamboo skewers then place into a large, shallow plastic container that has a lid.
Pour marinade over the meat and refrigerate for at least four hours or overnight. Turn occasionally.
When ready to cook remove kebabs from the marinade and either BBQ or grill (broil) turning so all sides are cooked to your liking. Baste with marinade while cooking.

Microwave 4 mins., then oven roast 4 mins., turning after 2 (heat oven first). Garden peas (not mushy). Well-browned chips, salted pre-cooking. No gravy. Serve with Rioja, Aussie Shiraz, Chianti or Garnatxia. Invite me next time!

Apply a little peanut oil and a few drops of lemon juice, let them sit in that for about half and hour, and grill or pan broil (fry in the pan with no big puddle of oil). .

Defo on the barbie!
I did some on the normal grill and they were no where near as good as barbequed ones.
