i love spinach but i am getting bored of eating regular spinach salad(eggs,bacon,cheese,mushrooms, house dressing) anybody got anythign i can jazz it up with that will taste yummy? i am allergic to tomato so keep this in mind thanks y'all

Make a regular veggie salad using spinach in place of or in addition to lettuce and put whatever dressing you like on it.

Mix it with shredded red cabbage, radishes, cucumbers, sunflower seeds or croutons.

Make it warm by putting spinach in a saute pan with some olive oil and garlic.

Sometimes I like my spinach cooked, so I mince a couple cloves of garlic, sautee them and in half a cup of water and a generous dollop of butter, cook the spinach thoroughly. Add 1/2 cup of half and half and some instant mashed potatoes, another clump of butter and mix well. Finish off with Parmesan to taste. Yummy!
This mixture makes a delicious filling for tacos and such, too.

Warm Spinach Salad

INGREDIENTS:
1 (10 ounce) package washed spinach leaves
1/4 pound turkey bacon, chopped
1 cup finely chopped red onion
1 (10 ounce) package frozen corn kernels
1/2 cup red wine vinegar
4 teaspoons sugar
1/4 cup crumbled blue cheese
2 cups purchased fat-free croutons

DIRECTIONS:
If desired, stack spinach leaves and cut into 1/2-inch-wide strips. Mound spinach equally onto plates.
In a 10- to 12-inch nonstick frying pan over high heat, stir turkey bacon until browned and crisp, about 5 minutes. Spoon equal portions of the bacon over spinach.
To pan, add onion, corn, vinegar, and sugar. Stir mixture until onion is limp, 3 to 4 minutes. With a slotted spoon, transfer onion and corn onto spinach, then spoon cooking liquid over salads.
Arrange blue cheese equally on salads and add croutons.

avocado is lovely in salad ... you may also try some cold cuts, shredded. i enjoy chicken or turkey on spinach. carrots and red onion are also good additions, as well as chopped nuts like almonds or pecans. i like green peas in salad too ... buy frozen baby peas and thaw them by running them under cool tap water and then just throw them on. croutons are good too.
