There are high voltage busbar. How to protect those things?

It depends to a certain extent on how high the voltage actually is. If it's a few hundred volts, just the insulation of the wire will probably be enough. If it's larger than that, you may have to start thinking about special, high-voltage insulated wire.

If it's an exposed buss bar, it will probably be mounted on some sort of insulating supports.

And, in any event, you want to make it as difficult (or impossible) as you can for anyone to accidently come into contact with them when the equipment is operating.

I assume you wish to protect people from high voltage busbars. The usual way is to completely surround them with a water-tight grounded metal enclousure. The ground conductor to the enclosure must be capable of withstanding the full current capabilities of the busbar. This way, if there's ever an accidental short circuit to the enclosure, the bus's fuse/breaker will instantly blow open. OSHA's rules in these matters are very specific, as is the National Electrical Code.

With a NEMA enclosure.
