I absolutely LOVE the Four Cheese & Tomato Panini from Fazoli's. On the website it says the spread on the sandwich is mayonaise, however, I think they add ingredients to the mayo. I'm not sure what they are - but if anybody knows what the trick is to this great sandwich please tell me!!! Also, if you have a great recipe for a Cheese & Tomato Panini, I'd love to hear it. Thanks so much!

Four Cheese Panini With Basil Tomatoes

Ingredients:
1/2 cup shredded fresh mozzarella cheese (3 ounces)
1/2 cup shredded Fontina cheese (4 ounces)
3 tablespoons asiago cheese or parmesan cheese (freshly grated)
1/2 cup shredded provolone cheese (3 ounces)
8 slices tomatoes, thinly sliced
1 tablespoon fresh basil, chopped
4 ciabatta rolls, halved lengthwise (spread outsides with butter) or 8 slices firm white bread (spread outsides with butter)
8 arugula leaves (optional, but recommended)

Prep:
In a small bowl, combine cheeses. Spread the cheese on the bottoms of the ciabatta rolls. Top with tomato slices and brush with olive oil. Sprinkle with basil and add 2 arugula leaves and close the panini.
Set a large cast-iron skillet or griddle over moderately high heat. Arrange the panini in skillet and weight them down with a smaller pan (can fill with water if you need more weight). Cook the panini until the outside is crisp and the cheese is melted, 3 minutes per side.
Cut panini in half and serve at once.

Its not exactly what you are looking for, but you can always substitute ingredients for what you want.

Chicken Pest Panini
INGREDIENTS
1 focaccia bread, quartered
1/2 cup prepared basil pesto
1 cup diced cooked chicken
1/2 cup diced green bell pepper
1/4 cup diced red onion
1 cup shredded Monterey Jack cheese
DIRECTIONS
Preheat a panini grill.
Slice each quarter of focaccia bread in half horizontally. Spread each half with pesto. Layer bottom halves with equal amounts chicken, bell pepper, onion, and cheese. Top with remaining focaccia halves, forming 4 sandwiches.
Grill paninis 5 minutes in the preheated grill, or until focaccia bread is golden brown and cheese is melted.
