The easiest way I do muchrooms is pull the stalk off and in the hollow add chopped ham, parsley, garlic and cover with blue cheese and a knob of butter. Cook in the oven until the mushrooms cooked and the cheese melted, depending on your oven this will only be about 15-20 minutes.
A nice glass of Rioja goes really well with this dish.

Crab Stuffed Mushrooms
Ingredients:
24 large button or crimini mushrooms, caps cleaned and stems removed and reserved
4 ounces Mascarpone cheese
3/4 pound canned cooked crab claw meat, look for Philips brand
2 teaspoons mayonnaise
1 tablespoon red onion
1 tablespoon celery, minced
Tabasco sauce, to taste
sea salt and fresh cracked peppercorns to taste
1/2 cup Parmesan cheese, freshly grated
Preparation:
Preheat the oven to 375 degrees F.
Arrange the caps, cavity side up, in single layer in a glass baking dish.
Rinse and finely chop the reserved mushroom stems and combine with the mascarpone cheese, crab, mayonnaise, red onion, celery and Tabasco. Season to taste. Fill the mushroom caps with the mixture.
Add enough water to just cover the bottom of the baking dish. Sprinkle the caps with the Parmesan cheese. Bake for 15 to 20 minutes, or until they are heated through and the cheese has lightly browned.
Note: Mascarpone is a triple-creme cheese, made from low-fat content fresh cream from the milk of cows that have been fed special grasses that contain fresh herbs and flowers, creating a very unique flavor. Mascarpone is the principle ingredient in the classic dessert Tiramisu.

INGREDIENTS
12 fresh mushrooms
1/2 pound ground beef
1 tablespoon minced onion
1 clove garlic, minced
1 tablespoon butter
1/4 cup bread crumbs
salt and pepper to taste
1/4 cup heavy cream
1/4 cup butter, melted
1 teaspoon chili powder
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
Remove and chop mushroom stems.
In a saucepan over medium heat, combine ground beef, onion, and garlic.
Cook until beef is no longer pink; drain.
Mix in chopped mushroom stems, 1 tablespoon butter, bread crumbs, salt, and pepper.
Cook, stirring frequently, for 5 minutes.
Remove from heat, and stir in cream.
Dip mushroom caps in 1/4 cup melted butter, and stuff generously with meat mixture.
Arrange stuffed mushrooms in a baking dish.
Sprinkle with chili powder.
Bake for 20 to 25 minutes in the preheated oven.

I can't remember the recipe exactly, but there's one where you caramalise some red onions in port, and then add to stilton. Put it under the grill and it's lovely. If you can't be bothered with the effort of that, I always think that blue cheese goes really well with mushrooms, so just have that.

ITALIAN STUFFED MUSHROOMS
2 tablespoons olive oil
24 large (about 2-inch-diameter) mushrooms, stems removed and chopped, caps reserved
1/2 cup chopped fresh fennel bulb
1/4 cup chopped drained oil-packed sun-dried tomatoes
3 garlic cloves, chopped
1/2 cup grated Fontina cheese or crumbled Gorgonzola cheese
1/2 cup grated Parmesan cheese
1/4 cup (packed) chopped fresh basil
1 large egg
Additional olive oil
Preheat oven to 350°F. Brush 15x10x2-inch glass baking dish with oil. Heat 2 tablespoons oil in heavy medium skillet over medium-high heat. Add chopped mushroom stems, fennel, tomatoes, and garlic. Sauté until stems and fennel are tender and beginning to brown, about 12 minutes; transfer to medium bowl. Cool 10 minutes. Mix in cheeses, then basil. Season filling to taste with salt and pepper. Mix in egg. Arrange mushroom caps in prepared dish, cavity side up. Brush mushroom cavities lightly with additional oil. Mound filling in mushroom cavities, pressing to adhere. Bake until mushrooms are tender and filling is heated through, about 25 minutes, and serve.
Makes 24.

I once had Chicken Argyle in a resteraunt. Its mushrooms stuffed with chicken and crab meat topped with cream and baked. I found it a little rich and sickly but, if you like that kind of thing its okay.

i like this recipe grate some strong cheese cut up a spring onion and garlic, put this mix in the middle of a big flat mushroom and wrap bacon around it

there'great, love them! use fresh, white, medium mushrooms from the supermarket - keep only the 'hat', wash them very well (don't need 2 peel them). chop the stumps and mix them with shredded cheddar cheese (I like it sharp) and dry pastrami (cut very thin). then add a little pepper if u like and pop them in the microwave for about 5 min (it depends on the oven u'll figure out the right time for the second time!:). Enjoy!

get some large mushrooms a layer of stilton and wrap in palma ham, stick it in the oven until the cheese melts. Lovely

My fav is:
Take stalks out of mushrooms and stuff with garlic liver pate then dip into batter and deep fry......delivious. Serve on a bed of salad with cranberry dip and garlic dip.
