Mary and Joseph never had wedding rings, and Jesus never got married, so it can't have a Christian history can it? Does it just signify eternal love?

Some traditions hold that Mary and Joseph DID have wedding rings.

Also - in the first meeting of the servant of Isaac and Rebekah, he seeks her favor by the present of a massive earring and two bracelets. After the consent of her parents, there were more costly gifts - "jewels of silver, and jewels of gold, and raiment." In later days, it was the custom for the bridegroom to place a ring upon the finger of the intended bride. It is not certain how early this custom began. There is no mention in the Bible of betrothal finger-rings; but, in Genesis xli. 42, a ring is mentioned as a token of fidelity or friendship, and, in Luke xv. 22, of adoption.

Where is your proof they never had rings? They very well may have.

Also kindly note that Jesus was a Rabbi and to be a Rabbi under Jewish law you have to be married. So Jesus had to be married. There are entire schools of thought that posit that the wedding where he turns water to wine was in fact his own wedding and that the woman he married was Mary Magdaline.(SP)

Now as to the meaning of the wedding ring.
A wedding band is a ring a ring is a circle. A circle is without end. The wedding ring signifies that Marrage is a eternal union. However the ceremoney we use makes it a vow of till Death do us part. Thus it would seem your not bound by marrage in the afterlife under current western Catholic practice..

It predates christianity. There are christian beliefs that don't allow wedding bands or the exchange of rings during the wedding ceremony. The circle has always been the symbol of eternity and life.

I think it represents the virtual iron collar and chain which goes on the Husband when he is insane enough to say "I do".
After that its all over, and he goes to live in the garage with the car.
