It's a lot fo things nowadays.
You need to know a lot of math, to be able to create a structure of a building that will hold up properly in all sorts of conditions.
You need to know your materials.
You need to know how to fit the building into the landscape, and how to adjust the ground if need be (like leveling it or giving it a pitch so that water doesn't seep into the basement.)
And you have to have a good idea o the purposes to which the building will be put, the amount of people using it, and the tastes that the people will likely have.
Beyond this, you must also use energy-efficient practices. FOr instance, there is a certain amount of light that must enter a commercial property naturally so that lighting costs will be reduced.
So, really, it's a lot more than I remember learning about in school.
