What is something she loves to do? Photography, Cook, Paint? Find out what her interests are and give her something related to that.

For the love of god, find out where she is "registered" She and her husband-to-be have taken the time to choose what they want in terms of dishes, silverware, towels, etc from different stores. This is called Registering for gifts.
They go to each store and create a list of things they want as gifts. This practice is in place so people like you that mean well don't give them things that they do not want. You get to do this in first marriages and with your first baby, and anything beyond that is just tacky.
Now call your niece and ask her "Where are you registered dear?" Then you go to those stores and tell the salesperson you need to see gift registry for Suzie Q's wedding. They will print out a sheet and then you can choose what to buy. When you are paying for the gift, tell them "This is for Suzie Q's wedding, she is registered here" so that other people don't buy her that same fondue pot or toaster.
Give them what they want, please. In life you very rarely get to say exactly what you want then get it, and in this case it's the proper way to handle it.
If she is not yet registered anywhere then you should educate her on the proper way to register for her gifts, or offer to take her to a few different stores to choose items for her registry!!

best gift i ever saw from an uncle was a
lava lamp
remember those? from the '60s!
he told them he wanted to give them something that would always be on display and not just put out when they were expecting him to visit. well those lamps take some time to heat up and work properly so they have to be plugged in at all times. that lamp made a perfect little night light for their upper hallway - it was always on, it was on display and uncle was a happy man!
failing that i would suggest a really good white damask tablecloth with matching napkins.
it is something very few people think to buy anymore, and it is something they will get good use out of everytime they have special dinners for birthdays, anniversaries, holidays, and sunday dinners! and every time they use it they will remember their uncle who put so much thought into the perfect gift.

Something I wish I'd gotten more of for my wedding/showers is a collection of good cookbooks. I don't want to sound stereotypical, but in most relationships the wife will do most of the cooking. I hadn't had very much experience and I would have loved for someone to give me cookbooks that they had tried and tested already for years. If you know she hates to cook and probably never will, then this isn't the best idea... but I love cooking (even though I'm so new at it), and having good resources makes it even more fun and rewarding.

Personally? For the wedding I'd like $$. For the shower, something from my registry or GC to one of the stores or a place like Home Depot.
But, I am not your niece. Nor do I know your niece in any way. She may not feel the same as me. You'd be best to ask her mother/maid of honor.

see if she has a gift registry and see what gifts she would like. Also a lot of people ejoy getting gifts that they wouldnt get themselves. My sister got a fondue pot, crepes maker, and a smoothie maker and she loves all of them

I don't want to sound cold, but $$ is really the only thing that is appreciated at a wedding. If you really want to get her a nice gift and are completely against $$, maybe you can get her invitation framed professionally with their names and a photo of them.

i myself don't really want any wedding gifts.. we already have toasters and such.. :)
um maybe a nice photo album or something would be nice..
i'm sure she has a gift registery somewhere
