Buy Campbell's reduced sodium Tomato soup. Make two cans and while it's cooking add choped fresh spinach (frozen works great too). Add as little or as much as you like. Serve it with Triscuit reduced fat crackers and you have yourself a tasty and very healthy meal.

Personally, I find a garlic based soup to be great with salad and it's very healthy too. I wouldn't recommend anything to heavy. A lighter broth type would be best. To spice up a good bread, try brochette. An Italian bread toasted with cream cheese, tomatoes, garlic, olive oil, black olives ect....Be creative and add/remove what you wish. Good luck.

A toasted pannini or some good soup. I love tappanade on bread and Sausage and Lentil soup.
You could make a cob salad and have that actually BE the meal itself. We do that all the time and it is yummy! Serve it with some nice Tuscan bread. Crusty on the outside and soft warm and chewy on the inside.

add some feta cheese to the salad and serve it with some crusty bread and olive oil with herbs and garlic for dipping. or you could serve soup in bread bowls. never done it myself, but i've had it lots of times and it is really good...
