Excel won't do that automatically for you, but then you can always re-sort the data (using the Data/Sort menu).
Excel will remember your sort criteria, so just clicking OK in the sort box will be OK.

sorry, but after you enter additional rows you will have to do the sort again - excel won't do it for you.
also it may not be a good idea to publish your phone # so publicly! that's asking for trouble.
