If you have a smoker/cooker, use that! Put in some wood chips in the smoker, and cook is slowly over the course of a few hours. Make sure to wrap the trout in foil when cooking. It will come out a golden color with NO fishy taste!

Rainbow Trout with Yogurt Sauce

INGREDIENTS
1 cup plain yogurt
1 cucumber, shredded
2 tablespoons chopped fresh dill weed
1 teaspoon lemon zest
1 tablespoon extra virgin olive oil
salt and pepper to taste
4 (6 ounce) fillets rainbow trout
1 pinch lemon pepper
DIRECTIONS
In a medium bowl combine the yogurt, cucumber, dill, lemon zest, olive oil and salt and pepper. Mix well and set aside.
Turn oven broiler on. Coat a broiler pan with non-stick cooking spray.
Sprinkle fillets with lemon pepper and place on broiler pan. broil for about 8 minutes or until fish flakes with a fork. To serve spoon yogurt sauce over fish.

Those recipes all look good but I also love to just oil them a bit then throw 'em on the grill (gutted, but otherwise whole) and put the top down.

When done, they're delicately-flavored but totally delicious... I just eat them plain they're so good.
(Costco is one good place to buy them, and they're generally cheap whole, even at the grocery store.)

filet them.
soak them in buttermilk for about 2 hours (longer if you can)
roll them in a mixture of cornmeal, salt, pepper, and garlic powder.
fry them in hot oil until golden brown.
serve hot with cornbread, okra, collard greens....anything really.
