If you want a really quick and good tasting gravy my mom told me to pour 2 cans of Golden mushroom soup and 1 can of water in with your roast. It is really tasty.

I found this site that has a manual for your Nesco. It has a variety of recipes in it. I hope it has what you are looking for. (By the way, my grandson was just diagnosed with Congenital Muscular Torticollis, unusual name, most unusual)
Pot Roast
1 (2-1/2 to 3 Lb.) Pot roast
4 Large Onions, cut in half
8 Whole Small red potatoes, peeled
2 Tbsp. Margarine, melted
1/2 Tsp. Browning sauce
4 Medium Carrots, cut into chunks
Set Rack in Cookwell. Preheat 6-Qt. Roaster Oven to 350°F.
Lightly spray Cookwell and Rack with spray cooking oil.
Arrange meat and vegetables on Rack. Stir together margarine and browning sauce; brush over meat. Cover; roast 10 minutes. Reduce temperature to 300°F. Cover; roast 30 to 40 minutes for medium (145°F. on meat thermometer); 45 to 60 minutes for well done (160°F. on meat thermometer).
For slow cooking: Brown meat then reduce temperature to 250°F. and roast 2 to 3 hours or until tender. (Serves 4)

Not sure what a Nesco oven is, but my favorite way to make roast is to marinate it in red wine (cab sauvignon), onions, black pepper, garlic, a little salt and some EVOO (extra virgin olive oil). Marinate it overnight then cook slowly until done.

Sear roast. Put in oven and cook amt listed in the book, add cut potatos, carrots and onions. Look in the book to see how much water you need. I use a pressure cooker myself.
