I have a really simple recipe for flour tortillas. I was trying to make a yeastless pizza dough, and I ended up with some delicious tortillas. Whoopsie.

2 cups flour
1 cup water
1/2 tsp salt
1/2 tsp pepper
Other spices to taste.

1. mix ingredients together
2. separate into 8 balls, roll out on lightly floured surface
3. fry each tortilla about a few minutes on each side on a hot release-sprayed griddle. You should use your olfactory senses to tell you when they're done.

Adding some baking powder, like a half tsp in the mix above, will provide some air pockets in your tortilla, but it's optional.

INGREDIENTS
1 1/2 cups all-purpose flour
1 1/2 cups cornmeal
2 teaspoons baking powder
3/4 teaspoon salt
1 cup warm water (110 degrees F/45 degrees C)
DIRECTIONS
In a large bowl, stir together the flour and cornmeal. Add baking powder and salt, and mix together well. Stir in water to form a crumbly dough. Work dough with your hands until it holds together.
On a floured surface, knead dough until smooth. Divide dough into 10 to 12 pieces. Roll each into the shape of a ball. Cover lightly with saran wrap and let rest for 10 to 15 minutes.
Flatten each piece of dough by hand, then roll into a 8 to 9 inch round.
Heat a large skillet over medium heat. Lightly grease the hot pan, and place one tortilla in the pan. Cook tortilla until light brown, turning to ensure equal browning. Repeat with remaining tortillas.

I use 2 cups of AP flour, 1 tsp salt, a few good shakes of ground cumin, and 1/4 cup canola oil. Whir all that in a food processor. Then with the machine running, drizzle in 2/3 cup warm water.

Knead it, divide it into balls, cover with a clean dishtowel, and let rest for 30 minutes. Then press them in a tortilla press. I stack mine between sheets of wax paper and put them in a ziplock.

I've been making them for years, and anyone who's had them is a total convert to homemade ones!

go to the Grocery store... they will either be near the bread or the cheese... take them to the check-out.. and pay for them... and Taa-Daa you have them!!!
