STUFFED MUSHROOMS withBLUE CHEESE
Yield: Makes 20 appetizers.
• 20 large fresh mushrooms
• 2 tablespoons butter or margarine
• 1/4 cup finely chopped red pepper
• 1/2 cup heavy cream
• 1/3 cup crumbled blue cheese
• 1 1/2 cups cooked rice
• 1 tablespoon minced fresh basil
• 1/8 teaspoon ground white pepper
• fresh basil, chopped, for garnish
Clean mushrooms with damp paper towel. Remove mushroom stems; finely chop stems and set aside. Saute mushroom caps in butter in skillet until almost tender; drain on paper towels.
Saute mushroom stems and red pepper in skillet. Add cream; bring to a boil. Reduce heat and add cheese; cook until melted. Stir in rice, basil, and pepper; cook until thoroughly heated.
Spoon rice mixture into mushroom caps. Place mushroom caps in greased shallow baking pan. Cover and bake at 350 degrees 10 minutes or until tender. Drain on paper towels. Garnish stuffed mushrooms with basil.
Filet mignon or any type of steak with sauteed mushroom and topped with blue cheese

Hi, my name is Pasquale I'm a chef and I think to have the right answer for you :).
My suggestion is the following :
Field mushrooms mixed 1 lbs
Blue cheese 1/2 lbs
Garlic 1 clove chopped
Cut in four the mushrooms than saute them in a pan with olive oil and the chopped garlic since they are a nice color, no brown, try to give them a nice golden color paying attention that you will place them into the pan when the oil is very hot and the garlic start to be blondy.
Once they reach the desired color, season with fresh black grounded pepper and salt, strain the mushroom from the frying oil and place them into a one cup size Pyrex( pot which can go in the oven) once in the pot top the mushroom with the blue cheese crumbled and heat in the oven 400F for 12 minute until the cheese is completely melted.
Place out from the oven for 4 minute Serve warm. enjoy

Bake the mushrooms for approx 25 mins with the garlic and the blue cheese. The field mushroom can take a strong flavour. Serve with a grunchy green salad.

Best bet's risotto.
If the field mushrooms are very large, you could pull the stalks out, mix the blue cheese with the sweated off garlic and some bread crumbs and pop in a moderate oven for about 20 mins. (Depends on girth and thickness of mushrooms).
You'll need some salad and crisp French bread to accompany this dish.

This is a fabulous tart for an appetizer or side dish. I would simply add the mushrooms and garlic to be sauteed w/ the onions, maybe leave out leeks.
Supar Pie's Blue Cheese Walnut Tart
1 (9”) tart or pie shell, blind-baked about 15 min.
1½ cups chopped walnuts, toasted
1 Tbsp. butter
1 Tbsp. EVOO
1 cups chopped onion
1 cup chopped leek, white and light green only
3-finger pinch of koseher salt
3 large eggs
¾ cups heavy cream
1 cup blue cheese crumbles
1. Preheat the oven to 400°F (200°C).
2. Scatter the walnuts evenly over the bottom of the prebaked tart shell.
3. Heat butter and EVOO over med heat. Add onions, leeks, and salt, sauteeing until veggies are tender. Remove from heat, let cool slightly.
4. Place the eggs in the bowl and whisk well. Add the heavy cream and whisk until smooth. Add blue cheese into the egg/cream mixture and mix w/ a rubber spatula. Add onion/leek mixture, and mix well.
5. Pour the egg mixture into the tart shell, filling almost to the top. Level out chunks of blue cheese, veggies, adn walnuts as needed. Bake for 25-30 minutes until the top is light browned and the custard has puffed up. The tart will collapse as it cools. Serve warm.

Stuffed Mushrooms with Blue Cheese
Ingredients
Ingredients: 16 large mushrooms
4 oz blue cheese
1 clove garlic, minced
10 oz. frozen chopped spinach, thawed
2 Tbs. butter
salt and pepper to taste
preheat oven to 350 °
Instructions
1. Remove the mushroom stems and chop finely.
2. Mix well the chopped stems, blue cheese, garlic, spinach, and salt and pepper.
3. Melt the butter and coat the entire mushroom, inside and out.
4. Stuff the mushrooms with as much stuffing as can fit
5. Bake at for 10 to 15 minutes until bubbly and browned

Preheat oven to 200DegreesC
1. Clean mushrooms (use tissue not water)
2. Fry garlic in pan with olive oil (3 mins)
3. Add mushrooms to same pan
4. Fry on both sides for about 2 mins each.
5. Put mushrooms on baking tray.
6. Crumble your blue cheese (or stilton) on top of mushrooms
7. Pour sauce from pan on top of mushroom and cheese (not too much).
8. Pop in oven for about 5 minutes or until cheese has melted.
Serve with fresh baguette or on its own.

how about mincing the garlic with the mushroom stems, blend with some seasoned bread crumbs, stuff the mushrooms, top with a chunk of blue cheese and run them under the broiler? Sounds yummy! Sadly, I can no longer enjoy blue cheese due to food allergies, so have some for me!

you could take the mushrooms and sautee them in the garlic and take the bluecheese and put into sourcream. And add all of this together and make a dip.
Or some kinda pasta dish using all these ingredients. Just boil pasta, sautee mushrooms and garlic. Add cooked pasta and crumble blue cheese and mix together.
