I read it in a magazine and wanted to know if this was just the writer of the articles $0.02 or was it fact.

Adding cheese to broccoli doesn't take away from the nutritional value of the broccoli -- the broccoli will have the same amount of vitamins and minerals as it has without the cheese. However, adding the cheese adds the "nutritional value" of the cheese -- in other words, you're still getting the good stuff, but you've just added a whole lot of fat from the cheese. Obviously, I don't know exactly what the author wrote or the context in which it appeared, but it amounts to this: if you want to eat healthily and/or lose weight and/or avoid fats, etc. broccoli, like just about any vegetable, is a great thing to add to your diet....but if you melt 8 oz of cheddar cheese on top of that broccoli you're negating (or at least drastically reducing) the healthful aspects of eating the broccoli in the first instance.

I love cheese on broccoli! I think I am adding the nutrition of the cheese, by adding it to the vegetable. Perhaps, what you read was something to do with keeping calories down.......and the caloric value went up when the cheese was added. Broccoli is wonderful for your body, and if you are not allergic to cheese, then, I consider it to be the perfect thing to have on this yummy vegetable!

The cheese doesn't take away anything from the broccoli but nutritious wise it adds fats and salt. If you use a low fat low sodium cheese you can have it all!

It doesn't take away form the nutritional benefits of broccoli at all!!! It just adds some fat calories to the dish.

Nope not at all. Totally a mith.. If you put cheese on the broccoli you will get extra calcium :).

If you are eating broccoli because it is lowfat and low calorie then yes, smothering it in cheese would void those benefits.

I don't think it takes away, but cheese, especially processed cheese like Velveeta, adds fat and calories. If you want your cheese, try and use a reduced fat version.

This is a myth.

To maintain the most nutrients in your vegetables you should steam them as opposed to boiling them. Better yet is to eat them raw.

Whatever garnishes you put on top do not affect the actual vegetable.
