I like whole chicken in the crockpot. Just because that way I don't have to constantly check on it. When I get home from work the chicken is done and its literally falling off the bone.
I season my chicken like I normally would if I were to put it in the oven. (I put onions inside, slather it w/ mustard, garlic powder, corriander, 1/2 a lemon, pepper, and paprika.)
Chop up big chunks of carrots and potatoes and some onions but it in the bottom of the crock pot w/ a little bit of water and then the chicken on top. The chicken will create lots of juice but it needs a little bit of water to start cooking.

If you are looking for "roasted" potatoes, you'll probably use the oven, which is dry heat. Since you'll have the oven on for the potatoes anyway, why not just roast the whole chicken in there as well? Put the scrubbed potatoes (skins still on) all around the bird in the roasting pan and they'll absorb the chicken flavor and turn out YUMMY!
My favorite herbs for chicken are parsley, tarragon, celery seed and a dash of paprika. You can stuff a whole onion into the bird's cavity and that will add to the flavor.
I'm sure you'll get lots of tasty suggestions.

When I worked....I used the crock pot ALL the TIME!
I think if you put on LOW and cook all day and half the night..it comes out really nice...
Chicken and roasted potatoes???
I don't think? But then everyone has there own taste!
If you do the potatoes in with the chicken I would make sure you well SEASON! or your potatoes will have no taste..well..they would taste like a plain old roasted potatoes..
Did you not get a little recipe booklet with your pot?
The crock pot I have does EVERYTHING....Roasts,cooks,steams even bakes...
I do have a recipe calls for a whole chicken,1Tbsp. of veg. oil
2 Tbsp. of Paprika 1Tbsp.minced parsley,1Tbsp.Italian herb seasoning.It calls 1-1 1/2 hours. Rub onto the chicken well and cook.(I used meat thermometer as Chicken needs too be COOKED) or you could get sick! place in the thickest part of the THIGH.
I would even try pouring some BQ Sauce on ....and just let it go!GOOD LUCK...hope this helps you out some!

Use the oven for a whole chicken to get it brown and crispy on the outside. To get the BEST juciest chicken, brine it for 4 hours or more ( overnight is best)
Heat 4 cups water and add 1.5 cups salt and 1/2 cup sugar ( brown or white, does not matter) until dissolved. Add seasonings of your choice to the basic brine, I like 1/2 cup apple juice, 1 tbs rosemary, 2 cloves shopped garlic, but you can add whatever you like, really.
Cover the chicken in the brine ( works great in a really big ziplock, but a big bowl works too)
After at least 4 hours, pour off brine, rinse with water and rub skin all over with butter, including under the skin on the breasts.
Put whatever you want in the cavity, if you used apple juice the brine, put in a apple cut in half, some more rosemary, or a lemon, or an onion, or a combination..
Roast at 350 until done depending on the size of the chicken
Brining makes a HUGE difference in chicken, it comes out incredibly juciy and yummy. Enjoy!

A whole chicken will actually come out better in the oven, don't know why. But chicken legs or thighs will be awesome in the crock pot, they stay juicier than breasts do.
Your crockpot is better than the oven for pork or beef roasts, or stews, and for soups and stuff.I just got mine for Christmas and my husand has already perfected the BEST ribs EVER!!

Love the Crock pot
1 whole chicken
Salt & pepper to taste
1/2 stick butter or Promise (low fat) butter
Wash chicken and remove giblets from inside. Dry chicken and rub with butter on all sides. Sprinkle with salt and pepper. Be sure to get some salt and pepper on inside.
Put in crock pot in early morning (about 8:00 a.m.). Turn crock pot to low - let cook all day. When returning home from work about 4:00 or 5:00 you will have a delicious baked chicken. Remove from crock pot with spatula to keep from falling apart. You will have about 2 cups of chicken broth in pot. Use for gravy over rice or mix with Stove Top stuffing instead of water.
You put the potatoes under the chicken ,they will be yummy.

i suggest using the oven. i recieved a crock pot for christmas and it was a waste of food. i made a vegtable stew and it was not even cooked. the veggies were very hard and not so tasty. i think the oven will give the potatoes a moist feel with more taste.
