You are going to love the weather, nature and people of Puerto Rico. I do not know if you are bilingual... (English & Spanish). But you know English for sure... that means that your best bet will be to focus your job search in the touristic area of Isla Verde, Condado, and Old San Juan.
I wish it was easier to find a job as a bartender, but the reality is that that industry works by reference and by visiting the prospects in person. With a big smile, cool persona, and a nice resume you'll be good to go.
If you still want to try to do a little search before you arrive this is what I would do:
1. Visit clasificados online from PR newspaper. These are some openings as of today, but none of them are in the touristic area, so the ymay require you to speak spanish.
http://www.clasificadosendi.com/index.php?page=search&s_res=OR&q=bartender&cid=329
2. Check in hotel websites or call their HR offices and ask about bartending positions. Some of the best hotels are: Caribe Hilton, Sheratton Old San Juan, Intercontinental Isla Verde, Condado Plaza, El San Juan Hotel and Casino.
Good luck!

This is a good place to start.
http://www.clasificadosonline.com/Jobs.asp
You can search for jobs by city or just choose a general search.
This site is also useful for finding a place to rent / buy
Good luck
Another way, find out the names of different bars / hotels with bars and just send a letter.
You can also check out www.endi.com (online newspaper that has an employment section)
