I need to find detail on how the muscle, cardiovascular and skeletal system improvements relate to its performance on the racetrack.

The same way that a naturally fast human would still need to train to become a world class athlete, not sure about cardiovascular but training helps to build stronger muscles, but essentially you need a talented horse in the first place.
Honestly i beleive that a large percentage of training is on the mind of a horse and not always its body!

A race horse is an athlete,it does not matter if he is a good horse or a bad one.
Just like any athlete anywhere in the world he has to train.
There are three basic regimes required in any training,Chassis,aerobic and anaerobic.
Slow work(walk,jog,trot)will develop the muscles to hold the skeleton together,this is Chassis work.
Aerobic Work is to build endurance and the ability to hold an effort for as long as possible according to the athletes ability,be it a runner over 50 meters or 2 miles.
Anaerobics is to build speed and breathing capabilities in the athlete.
It is complicated and must be done carefully so as not to have mucle or tendons strains etc.
So you have Slow,Medium and fast work.
