For white or less dense fish I like to keep it simple and use a lemon pepper seasoning or just garlic and butter.

I'm not a fan of dense fish, but for salmon, tuna and mahi mahi I will use a teryaki glaze.

For white fish - poach in a white wine & cream sauce with sliced mushrooms and a boquet garni.
