Switch any two phases on the motor itself. That can cumbersome though because you have to wrap everything back up properly. If there is a local disconnect close to the motor, open it up and switch any two of the phase wires going to the motor. That would also do it and it would be much faster than doing it at the motor.

You keep the star or delta configuration unchanged (unless you needed to change the phase-to-phase votlage or wanted to change the active horsepower), and the ground wire of the star configuration also connected to ground untouched.

Run the other three phase wires from the motor to the center poles of a three-pole double-throw switch.
