I am cooking dinner for my mother in law for mothers day and have a nice starter and dessert but not sure about the main course, also my husband is vegetarian, so i would prefer a veggie recipe so i dont have to cook 2 meals!
any suggestions would be greatly appreciated!

Zucchini Antipasto

1.5 kg zucchini
6 pickling onions
6 fresh sweet basil leaves
6 cloves of garlic
12 tufts of fresh rosmary removed from sprig
2 tablespoon salt
3 cups olive oil
3 cups white wine vinegar
Wash and cut the zucchini into 5cm rounds, then cut lenghtwise into quarters, you should end up with long triangular sticks.
Either crush the garlic or chop finely.
At this point add all the ingredients into pot and bring to the boil, stirring once in a while.
Once it starts boiling, let it boil for exactly 5 minutes and then remove from heat.
Pack the zucchini into jars and distribute the onions evenly between the jars.
Pour over the hot juices (with the herbs) and then apply the lids.
Leave the jars to cool and they can be consumed after about 2 weeks.
It stores up to about 6 months.

Pasta con carciofi

2 tablespoonsextra virgin olive oil
2 clovesgarlic, chopped
2 cups (9 ounce package)frozen artichoke hearts
to tastesalt
to tastefreshly ground black pepper
1 jar Marinara Sauce
1 box Penne
2 tablespoonsItalian parsley, chopped
1/4 cupParmigiano cheese, freshly grated

HEAT oil in a large skillet over high heat. Add garlic, saute until golden.
ADD artichokes; season with salt and pepper.
ADD sauce and simmer for 5 minutes or until artichokes are cooked through.
COOK pasta according to package directions. Drain.
ADD pasta to sauce; mix well. Stir in parsley and cheese.
TRANSFER to a serving platter or bowl.


Macedonia di Frutta (Mixed Marinated Fruit)

You can use any combination of fruits in this refreshing dessert.
2 cups chopped cantaloupe
1 cup chopped peeled peaches
1 cup chopped strawberries
1 cup blueberries
2/3 cup chopped peeled nectarines
1/2 cup fresh orange juice (about 1 orange)
1/4 cup sugar
2 tablespoons grappa (Italian brandy) or brandy
1 1/2 teaspoons grated lemon rind
2 peeled kiwifruit, halved lengthwise and thinly sliced

Put all ingredients in a large bowl; toss gently to combine. Cover and chill 2 hours.

Recipe:
1. Cook enough rice.
2. In a frying pan, put oil, then put diced carrots. When it has softened, add some onions. Then add green peas. Add the corn.
3. Get the rice, and top with the carrots, onions, green peas. Add grated cheese for a bit of taste.
4. Get a tomato (or two) and chop it into little bits.
5. Get a few lettuce/cabbage leaves and cut it until it's very small.
6. Get three small containers (preferably china) and put the bits of tomato in one, lettuces/cabbages in another and salt in the last one. When you serve your rice put these containers beside them.

How about the drinks? I have a suggestion:
1. Mix green tea.
2. Add a teaspoon of vanilla extract.
3. Add ice cubes.
4. Serve.

GO OUT TO DINNER UNSTEAD. THIS WAY EVERYONE HAS A CHOICE AND THE PRESSURE OFF YOU. JUST MAKE SURE IT HAS A RESTAURANT WITH ALL THOSE'S FOODS. I DID IT MANY TIMES, AND IF THEY Asked"why are we now going out"? simple say if been working so hard that it would be great to get out, THEN ADD THE FUN REASSURANCE,. RAVE ABOUT A NEW RESTAURANT THAT PEOPLE ARE DELIGHTED OVER IT .. YOU KNOW .BETTER TO NOT BE STRESSED BY COOKING FOR EVERYONES. NEEDS , YOU NEED TO ENJOY YOURSELF TOO. PLUS NO CLEAN UP..

I prefer both fruits and fresh vegetables better, regardless how they look and taste. You desire a little of both.

maybe you could try a good vegetable lasagna, vegetable soup, stir fry, always stick with people pleasing foods to keep everybody happy, don't try some new freaky recipe to be cool. People love food they know....good luck!

have some tofu ,it is asian food from Taiwan.it is made from bean so dont worry about it.you can go outside and visit Vietnamese food store and ask them about tofu to buy.once you buy them,cook it with some tomatoes,you can ask vn people more details

Possibly omelets with cheese, mushrooms and spinach.
Eggs I think can be eaten by vegetarians.
