I love tuna steaks and salmon. Trout and walleye is okay. I think swordfish is out of my price range (ahi tuna, my favorite, is as well).

Fresh King Salmon from Alaska is the best, & I would recommend first, bbqing it over a nice hot coal fired BBQ, with skin on, & scales off...you can bbq this fish for a good 15-30 mins on high heat & get a great tasting mouth watering steak, filleted...this is the best way to eat, however you asking for a baking question, so then the best would be line a baking pan with tin foil & spray with Pam, & then lay your steaks or fillets on the foil, sprinkle with seasonings like salt, pepper, garlic, lemon pepper, etc. & then add a generous layer of onion on top, & cover the pan with tin foil, & cook at 350 degs, for 30 mins & look for white juices to flow from the interstial muscle fibers of the flesh, should be good & done, juicy & tasty!!!MMMM am getting hungry just thinking of this...

When I was younger, my friends parents would always go fishing, and whatever they caught the did the following- Clean the fish ASAP. take the filets and sprinkle them with a little bit of Tony cachere's, place the fillets in a buttered rectangular pan (big enough to fit the fish without squashing them) Then squeeze fresh Lemon juice on top of the fish and add fresh ground black pepper. (not a whole lot.)Then they would take slice fresh potatoes (cut like the big semi circle ones)and place them about 2 layers deep over the fish, and pepper those also. Place the pan with all of this stuff in it on top of a cookie sheet with a metal rack in between the fish pan and the cookie sheet. Bake until the potatoes are tender and -YUMM!
oh yeah. they lived on the lake, so it was usually some kind of freshwater fish- NOT CARP.

...For the first time, I'd go with Trout, largemouth bass, ...or catfish. Mix up some flour, corn meal, a little pepper, a teaspoon of cinnamon, coat the fish well with this. Place on a shallow cookie sheet, pre-heat oven to 350, bake for 30 minutes or so, until brown and flaky. Serve....and get ready to go for seconds...Yummmy...

My favorite white fish are Flounder, Haddock, Cod, Pollock,
Hake or Hoki -

Using a microwavable plate - spray with Olive Oil -
place fish in oil - sprinkle with Lemon pepper or Cajun spices

microwave for 3 to 3 1/2 minutes until it flakes

yummy! and good for the diet AND wallet

You can use any fish that you can afford or like. Just make sure they clean and scale it properly. Make a paste of garlic, salt, pepper, green chillie and lemon juice, add a few drops of cooking oil, or you can add paprika in place of chillie paste. Make deep gashes on fish, rub paste into gashes and in the under part of the belly, brush with oil or butter, put on foil and grill in oven till done, delicious. Always remember that all seafood should have crushed garlic it eliminates the fishy smell.

you can bake any kind of fish you like, either whole or cutlets, I love to cook Kingfish cutlets, place them on foil, place slices of onion, celery, sliced tomato, salt and pepper and drench with lemon juice. Close securely and bake in oven, then it is up to you if you serve it in the foil or take it out and present on a plate.

This is also great on a barbecue happy eating

I'd go with catfish your first time. go to the store and get some premade fry. dip the fish in it and fry it up ..
