The process of supplying the cells with nutrients and oxygen is one that goes on in the bloodstream 24 hours a day/7days a week - even when you are asleep. Exercising causes the body to burn nutrients and oxygen more quickly and so, to keep up with the demand, the heart speeds up so the blood can deliver fresh nutrients and oxygen to your cells.

When you exercise, your muscles use more oxygen. As they work harder, the level of oxygen in your bloodstream decreases. Your heart is also fed by the same bloodstream, of course, and is able to tell that its own supply is dropping as a result. To get more oxygen, it beats faster.

your heart pushes blood through your body, and your blood carries oxygen. Oxygen is essential for muscles to function, and they need more if they're working harder. Therefore, if you're working out, your muscles need more oxygen, ie, more blood being pumped to them, and your heart beats faster. This is also why your breathing rate increases- you need to get more oxygen into your system, and get rid of the carbon dioxide.
