abalone is a shell fish very rubbery and almost inedible if not done right. Assorted rainbow gems could be anything.

If it is from an Asian recipe,
assorted gems would be vegatables.

Abalone (from Spanish Abulón) are a species of shellfish called mollusks.
It is VERY rubbery in texture...
